BBQ-Glazed Tofu Skewers
with Garlicky Bulgur
We’re bringing out the best of vegetarian cooking without breaking a sweat. BBQ sauce lends a tangy-sweet shine to big chunky heirloom zucchini, sweet pepper and skewered cubes of tofu, done in a grill pan so they can pick up some char.

- 1 Block of tofu (non-GMO)
- 1 Sweet pepper
- 2 Garlic cloves
- 1 Heirloom zucchini
- 60ml BBQ sauce
- 80g Bulgur
- 4 Bamboo skewers
- 8g Simply Smokin’ spices (sugar, paprika, salt, onion, cumin, coriander seeds, mustard, sunflower oil, black pepper, Cayenne pepper, silicon dioxide, hickory smoke flavour)

Preparation

Cook the bulgur
- Place the skewers in a shallow bowl; cover with water.
- Mince the garlic.
- In a medium pot, heat a drizzle of oil on medium-high.
- Add the garlic and sauté, 30 sec. to 1 min., until fragrant.
- Add the bulgur, ¾ cup water (double for 4 portions) and a big pinch of salt; bring to a boil.
- Reduce the heat, cover and simmer, 6 to 8 min., until the bulgur is tender and the water has been absorbed. Fluff the bulgur.

Mise en place
- Meanwhile, pat the tofu dry; cut into ½ inch cubes.
- Quarter the zucchini lengthwise.
- Halve, core and cut the sweet pepper lengthwise into 1-inch pieces.
- In a medium bowl, combine the tofu, a drizzle of oil, ⅔ of the spices and S&P.
- Drain the skewers and thread each one with the tofu, leaving 1-inch free on the bottom.

Sear the vegetables
- In a second medium bowl, combine the sweet pepper, zucchini, a drizzle of oil, the remaining spices and S&P.
- In a grill pan (or large pan), heat a drizzle of oil on medium-high.
- Add the vegetables and sear, 3 to 4 min. per side, until tender.
- Transfer to a bowl and reserve the pan.

Sear the tofu skewers
- In the same pan, heat a drizzle of oil on medium-high.
- Add the tofu skewers and sear, occasionally brushing with the BBQ sauce, 2 to 3 min. per side, until crispy.

Plate your dish
- Divide the bulgur between your plates.
- Top with the vegetables and tofu skewers. Bon appétit!
