BBQ Beef Loaded Fries
with Sneaky Squash & Creamy Slaw
Put your short order cooks to work on this diner dinner. The potatoes need to be cut into thick wedges for oven fries and the shredded cabbage dressed with vinegar and mayo, while you brown beef and butternut squash with BBQ sauce.

Preparation

Roast the potatoes
- Preheat the oven to 450°F.
- Cut the potatoes lengthwise into ½ inch wedges.
- On a lined sheet pan, toss with a drizzle of oil and S&P.
- Roast, flipping halfway, 22 to 24 min., until browned and tender.

Microwave the squash
- Meanwhile, in a medium bowl, combine the squash, 2 tbsp water and a drizzle of oil.
- Cover with plastic wrap. Microwave, 5 to 7 min., until softened.
- Season with S&P; stir and roughly mash.

Cook the beef
- Meanwhile, in a large pan, heat a drizzle of oil on medium-high.
- Add the beef*; season with all but a pinch of the spices.
- Cook, breaking up the meat, 4 to 6 min., until cooked through.

Coat the beef & squash
- To the pan of beef, add the squash and cook, stirring often, 2 to 3 min., until lightly browned.
- Add the BBQ sauce and 2 tbsp water.
- Cook, stirring often, 1 to 2 min., until coated and warmed through.

Make the slaw
- In a large bowl, whisk the vinegar, mayo, a drizzle of oil, the remaining spices and S&P.
- Add the cabbage; toss well.

Plate your dish
- Divide the potatoes, beef, squash and slaw between your plates. Bon appétit!
*Health Canada recommends cooking ground beef to a minimum internal temperature of 71°C.
