Preparation
Mise en place
- In a medium pot, combine the demi-glace, 3 ½ cups water and S&P; bring to a boil.
- Mince the garlic.
- Roughly chop the bacon.
Cook the bacon
- In a large, high-sided pan, heat a drizzle of oil on medium.
- Add the bacon* and cook, stirring occasionally, 4 to 5 min., until lightly browned.
- Transfer ½ the bacon to a paper towel-lined plate, leaving the remaining bacon and drippings in the pan. Reserve the pan.
Start the risotto
- In the same pan, heat the bacon and drippings on medium-high.
- Add the garlic and sauté, 1 to 2 min., until fragrant.
- Add the rice and sauté, 30 sec. to 1 min., until coated.
- Add the demi-glace mixture; bring to a boil.
- Reduce to a simmer and cook, stirring occasionally, 16 to 20 min., until most of the liquid has been absorbed and the rice is al dente.
- If the liquid dries up before the risotto is al dente, add ¼ cup water at a time.
Finish the risotto
- To the pan, add the spinach, peas and ¼ cup water. Cook, stirring often, 2 to 3 min., until the spinach has wilted.
- Off the heat, add 2 tbsp butter and S&P; stir well.
Plate your dish
- Divide the risotto between your bowls.
- Garnish with the cheese and remaining bacon. Bon appétit!
