Time is on your side with our trusty cheese tortellini. In a mere 10 minutes you’ll get a pleasing pasta dish and your daily veg too. Stuffed with three kinds of cheese, the tortellini are at their best when boiled to al dente—so leave some bite in each bite! They love a cream sauce, so swirl it in there with butternut squash and leafy greens (and nutritional yeast for lip-smacking umami). For a counterpoint, cue the crushed croutons.

Preparation

Boil the pasta
Bring a medium pot of salted water to a boil. Add the pasta; stir gently to separate. Boil, stirring occasionally, 4 to 6 min., until al dente. Reserving ½ cup cooking water (double for 4 portions), drain and toss with a drizzle of oil to prevent sticking.

Sauté the squash
Meanwhile, in a large, high-sided pan, heat a drizzle of oil on medium-high. Add the garlic and sauté, 30 sec. to 1 min., until fragrant. Add the squash and sauté, 4 to 6 min., until tender; season with S&P.

Make the sauce
To the pan of squash, add the spinach. Sauté, 1 to 2 min., until wilted; season with the spices. Add the nutritional yeast, cream, ½ the reserved cooking water and 2 tbsp butter (double for 4 portions). Cook, stirring frequently, 1 to 2 min., until slightly reduced; season with S&P.

Combine the pasta
To the pan of sauce, add the pasta. Cook, stirring frequently, 1 to 2 min., until combined. If the sauce seems dry, gradually add the remaining cooking water until you achieve your desired consistency.

Crush the croutons
Meanwhile, lightly crush the croutons into large crumbs.

Plate your dish
Divide the pasta between your bowls. Garnish with the croutons. Bon appétit!
